And of course, the main cook was Paul Calokerinos

....helped here by his trusty off-sider Chris Plumidis (front), former owner of the Civic cafe and Tamworth cafe.....in Tamworth.

Paul and family had pre-cooked food up to two weeks beforehand to cater for the event.

But there was still much cooking to do on the day, not only for the afternoon luncheon, but for the formal dinner that was to begin at 7:00 pm.

What an extraordinary service ethic?
