After several years with the Hilton Group, Anna specialised in pre-opening for Hotel Nikko and Star City. As Training and Development Manager responsible for recruitment, selection, induction of all front of house operations including 14 bars and restaurants and the International Hotel, she has spent much of her time in the last few years writing curriculum for accreditation including RSA, Cultural Awareness, Workplace Hygiene and Safety.

The school has a professional kitchen servicing a 65 seat restaurant, Billy Blue Brasserie, on campus. As the Brasserie is a very popular North Sydney venue, it is a perfect place for students to learn about fine dining preparation and service, in a real environment, from their first semester of study.
